In this episode of 360 in the Kitchen, learn what counts as a healthy breakfast. Join in on preparing a delicious, nutritious and healthy breakfast (you can change the ingredients as you wish).

Three different recipes are below: Steel Cut Oatmeal, Egg Bites, and Yogurt Parfait.

Steel Cut Oatmeal

Ingredients

4 cups boiling water

1 cup Steel Cut Oats

¼ cup of Ground Flax Seeds

Toppings of Choice Examples Below

Coconut Sugar or Sugar of Choice

Coconut Flakes

Any Berries

Raisins or Craisins

Nuts

Milk of Choice

Directions

Bring Water to Boil, slowly pour in steel cut oats, reduce to simmer and simmer uncovered for 30 minutes

or until oats become oatmeal consistency you like.  Remove from burner and let it sit for 5 minutes.

Add the ¼ cup flax seeds and mix together.  To serve, add toppings of your choice.

Egg Bites (Makes 18)

Ingredients

1 Dozen Eggs

Yellow Squash - Coin Quarters (Cut into small pieces)

Italian Squash - Coin Quarters (Cut into small pieces)

Green Onions - Chopped include whites of onions

Sundried Tomatoes - Diced

Portabella Mushrooms - Diced

Italian Parsley - Diced

¼ tsp Italian Seasoning (Spice)

Shredded Mozzarella Cheese - as desired

Parmesan Cheese - Sprinkled as desired

Pesto Sauce or Sauce of Choice as desired

Directions

Stir up eggs (set aside), sauté yellow and Italian squashes in olive oil (enough to coat the veggies) for 2 to 3 minutes, add green onions and mushrooms and sauté for an additional 3 minutes or until vegetables are soften not mushy, add the ¼ tsp of Italian seasoning to the veggie mixture (stir) and set aside for 5 minutes. After the 5 minute cool down add the veggies to the egg mixture and then add the desired amount of Italian Parsley, Shredded Mozzarella Cheese, and Sundried Tomatoes and stir together (set aside).

In a muffin tin (pan) grease the pan with oil or butter. If you would like you can use silicon muffin cups which you place in the tin muffin pan and you also grease the silicon muffin cups with oil or butter. 

Scoop 1/3 cup of egg/veggie mixture into greased muffin tin (pan) or the greased silicon muffin cups in the tin muffin pan. Sprinkle with Parmesan Cheese and bake in the oven at 275 degrees for 20 to 30 minutes or until mixture in muffin tin or silicon cup in muffin tin doesn’t move and a toothpick inserted into mixture comes out dry.

Serve with Pesto Sauce or Sauce of Choice.

Yogurt Parfait

Ingredients

Yogurt of Choice

Berries of Choice

Nuts or Granola of Choice

Honey Drizzled as Desired

Parfait Class or Container of Choice

Directions

Into a parfait glass or container of choice, layer yogurt of choice and then layer berries of Choice, you can layer nuts and granola of choice also.  When done layer yogurt, berries, nuts, and granola drizzle with honey on top.  You are ready to serve.
